Well, what’s for breakfast?
The coffee is, well, perfect, if I say so myself. I make it with 2 extra-dark espresso shots, a heaping spoon of full-fat, organic coconut milk, a smaller spoon of coconut oil, and perhaps a sprinkle of cinnamon or cardamom, if that strikes my fancy.
Perfect coffee = perfect breakfast.
Then I hit an early lunch (usually featuring eggs, avocado, walnuts and meat+veggie dinner leftovers) after my morning yoga class.
Randy, meanwhile, is All About The Big Breakfast.
When he’s not joining me at morning yoga, he loves him some paleo waffles (alongside eggs, sugar-free bacon and perhaps an organic hotdog or sausage or three). My mom fed this habit a couple holidays back, when she gave him his Very Own Waffle Maker. Big Breakfasts have never been as extra-special (or as extra-big) since. (Randy, upon proofreading this post, wants it made clear that when he’s not at yoga, he’s hitting stuff at boxing…THEN come the waffles.)
Problem is, ever since we completed a 30-day elimination diet as part of our Alchemist Eating program, Randy’s usual paleo-primal waffles have felt a bit too heavy and dense—even for him.
Sure, they’re grain-and-refined-sugar-free. But they still leave him with a slowly digesting lump of paleo-primal waffle gunk (er, goodness) sitting in his belly. (I’m pretty sure that’s a diagnosable medical condition.)
This was happening before Phase 2 too, of course. It’s just that now, after 30 days of living without paleo treats, he’s aware of the difference…and of how Phase 2 eating felt better.
I take full blame (or, uh, responsibility) for this. Awareness sucks a little sometimes. And once you have it, there’s no going back. You’re welcome.
Look into my eyes…deeply into my eyes. You are growing sleepy…very sleepy…

Uh, huh. That’s what I’m talking about.
I tend to have that reaction to paleo-primal treats generally, which is why I eat paleo waffles like twice a year. Even then, it’s for dinner, not breakfast. And afterwards I have major moments of: That’s never happening to me again.
There’s no way I’d want something so heavy or dessert-like earlier in the day. Would make me feel, well, heavy, dessert-like and slower moving than grade-A maple syrup.
Still. I don’t want to poop on your—or Randy’s—party. And I totally celebrate the glorious paleo-primal waffle possibilities out there.
So for this week’s post, I’ve gathered a small assortment for you (and Randy) to try. I also have a little contest to announce (more on that below).
First, here’s your paleo-primal waffle line-up (I don’t recommend having these every day…but perhaps they’d do as a once-a-week treat for breakfast—or even lunch or dinner):

This is one of the many, many gorgeously photographed recipes by Caroline, over at Colorful Eats. Caroline suggested this option when I told her about Randy’s too-heavy-waffle dilemma. We haven’t tried it yet, but will very, very soon.
I’d be remiss if I didn’t include a waffle recipe from Juli, over at PaleOMG. She has a whack of them and all look, well, beyond delicious. The “light & crispy” caught my attention here…though we don’t use protein powder so will experiment with subs for that.
Okay, one more from PaleOMG. Because, well, Chocolate Waffles. In all honesty, we probably won’t make these as-is, simply because almond flour tends to sit like a lump in our bellies. But for any nut-flour junkies out there, please give them a go and report back—preferably with food porn pics.
This one is a PaleoMom guest post by Trisha of Eat Your Beets. Trisha’s ebook on food photography played a big part in my still-new, still-stumbling foray into that realm. I adore pumpkin so this waffle might be one even I will try (all the more so since it uses minimal coconut flour and no nut flours—likely minimizing that giving-birth-to-a-food-baby feeling).

If you’ve gotten the recipe from somewhere else, that’s fine. BUT you must include the original recipe link in your comment as well as a few words on your experience with making it and reasons for loving it. We of course welcome your own recipe creations or adaptations too.
Randy will be the sole arbiter of whose waffle wins.
I’ll send him the recipes (without your name attached). He’ll make the ones that appeal to him. And he’ll pick who gets Alchemist Eating’s Paleo-Primal Waffler Award.
Depending on how many waffles he’s in the mood for, the judging process might last a little while. But we’re setting a deadline of Midnight EST, Friday, June 12.
What does the Top Waffler receive?
A half-hour Alchemist Eating phone or Skype consult.
