As you might have guessed from some of our past posts, we can get a little lazy with our food choices…returning again and again to super-easy, super-tasty standbys (especially when things are feeling too rushed or busy).
We’re fine with that—and with falling back on our “recipe for an easy week” (which still offers plenty of room for variation).
And yet, there’s so much fun, interesting food out there.
So sometimes we push ourselves to spice things up.
This past week, all sorts of paleo-primal tacos kept popping up in our Instagram feed…reminding me how much I love tacos. And how much I want them. Like, now.
So…though we’ll be cooking and eating our usuals much of this week, we’ve also got a Sunday taco night planned. And, because we always make enough for leftovers, the fiesta will likely stretch into Monday (or beyond).
There are a gazillion paleo taco and nacho recipes out there—I’ve pinned a handful to the Paleo-Primal Mexican Food board on our Pinterest page.
For our feast, I’ll be using this Well Fed 2 recipe for the meat and plantain nachos. I’ve made it once before—it was deeelicious.

Along with these nachos (which I loved but Randy found a bit hard to bite into—quite possibly due to my less-than-stellar-plantain-nacho-making skills), we’ll be having soft tacos made of either A) lettuce wraps or B) cauliflower.
I’m really hoping to attempt the latter if the day isn’t crazy-crazy…but seriously doubt mine will turn out as gorgeous this:

Even if my soft shells look nothing like the ones above, making and tasting them is sure to be…interesting.
(We’ll be skipping the cheese, seeing as we’re entering Week 4 of Phase 2, but some hard, raw sheep or goat’s cheese would make a lovely addition too.)
