Did you guys catch my post earlier this week?
The one celebrating cardamom, reminiscing about Cairo, and exploring the link between food and memory?
If not, check it out here.
That post offers the backstory for this week’s cook-up focus…explaining my current obsession with all things cardamom.
It also discusses why this might be a helpful obsession for you too, if you’re wanting to facilitate digestion and metabolism, warm and nourish your digestive organs, and transform what we call “dampness” in Chinese Medicine.
Since, over the past week, my cardamom obsession has been playing out without a plan, I decided to find some legit cardamon-infused recipes to try in the days ahead.
This was a little harder than I’d imagined…mostly because the majority of paleo-primal recipes I found featuring cardamom were desserts (I include paleo breads, muffins and other baked goods in that category).
We tend to minimize these…and what I was really searching for was a collection of cardamom-spiked main dishes and sides.
I did collect the ones below…and will make as many as I can in the week ahead.
(Carrot Soup with Cardamom, Ginger & Coconut Milk, Recipe & Photo by A Veggie Venture, adapted from Nom Nom Paleo)
We’ll be having this soup with fish most likely—maybe tuna or salmon—along with a side of something bright and green, like…
(Lemon Cardamom Broccoli & Kale with Toasted Almonds, Recipe & Photo by Greens of the Stone Age)
We also like having some staple “bases” around to serve with animal proteins.
I’m thinking it’ll be a cauliflower rice week, featuring this one with cardamom pods…
(Saffron Cauliflower Rice, Recipe & Photo by Against All Grain)
And, for an easy, fun meal late in the week when other leftovers are dwindling, I suspect this will work out beautifully…
(Curry Coconut Cardamom Chicken Wrap, Recipe & Photo by Barefoot Provisions)
Last but not least…I did pick one (relatively healthy) dessert from the legion of cardamom-infused paleo treats out there…
(Carrot Fudge, Recipe & Photo by My Heart Beats)
You had me at Carrot Fudge. That is all.
Remember to check our Pinterest boards for other options (including ones without cardamom).
